Healthy Broccoli and Beef
Healthy Broccoli and Beef – Why take out when you can make it at home? This take out favorite is super easy to make at home. Even though it has minimal ingredients, it is super tasty and full of flavor.
Broccoli and beef is typically made with flank/skirt steak. I have made it with flank steak before but this time around I decided to change things up a little bit and use filet mignon. I was skeptical on how the meat would turn out but oh boyyyyy, it turned out so good. The beef was so tender that it would melt in your mouth and the broccoli had the perfect crunch.
- 1/4 lb filet mignon thinly sliced
- 2 Tbsp cornstarch
- 1lb. Broccoli (or broccolini), cut into sections
- 1/2 cup low sodium soy sauce
- 3 cloves garlic, minced
- 1 1/2 tsp fresh ginger, minced
- 1/2 tsp black pepper, plus more to taste
- 1/2-3/4 cup beef broth or water, as desired
- olive oil for cooking
- Combine thinly sliced steak with cornstarch and pepper. Toss to coat well.
- Heat oil in a large skillet over medium heat. Working in batches, add a first batch of sliced steak to the pan. (it is better if the meat is not touching each other)
- Cook 2-3 mins per side, then transfer to a plate to set aside for later.
- Repeat with remaining steak, adding more oil to the pan as needed.
- Make your sauce by combining soy sauce, beef broth, garlic and ginger.
- Pour sauce into the pan and stir in the cooked meat. After cooking the meat for a few mins with the sauce, add the broccoli and bring everything to a boil
- Remove from heat and serve over rice
Note on the broccoli: You can cook the broccoli in the pan by itself before combining the meat and the sauce. I like the broccoli to stay as crunchy as possible so this method works for me!
Note on the sauce: The sauce is supposed to thicken a bit as it cooks.
